Banana bread is one of our favorite treats in my house. I especially love it because it's SO easy to make banana bread a healthy, guilt free snack - I swear, when you combine eggs and bananas they are just magic! They are able to make a texture so similar to bread without any flours, it's pretty amazing.
This recipe is kid-approved, guilt-free, and super easy!
What you'll need:
5 Large Bananas (6 if they're small) 5 Large Pastured Eggs 1 cup Almond Butter (or any nut butter of your choice) 4-6 Tbsp Organic Maple Syrup 1 tsp Baking Soda 1 tsp Cinnamon Optional: 1/2 cup Raisins or Chocolate Chips 4 scoops of collagen peptides (I use THIS BRAND - you can use code JACKJACK10 for 10% off and free shipping!)
Preheat oven to 375 degrees.
Use a mixer to mash up the bananas. Once the bananas are mashed, add remaining ingredients except chocolate chips (or raisins). Stir in chocolate chips (or raisins) last.
Place parchment paper in a 9x13 pan, and pour in batter.
Bake at 375 for 25 minutes or until a knife inserted in the center comes out clean.
Turn bread out onto a cooling rack and peel off parchment paper.
Slice into squares and enjoy!
